BACON, EGG & CHEESE STUFFED WAFFLES
You might not think of them this way, but waffles are a great choice for a breakfast on-the-go. The only challenge comes when you add on toppings like butter and syrup which can create a sticky mess . We created this savoury waffle that is perfect as it is, no toppings required ! Think of it as a delicious breakfast casserole in the form of a waffle.
2 large eggs or 112ml liquid egg whites
2 pieces of cooked bacon, chopped into small pieces
80g FlapJacked Buttermilk Protein Pancake Mix
112ml water or 80ml skimmed milk
25g grated cheddar cheese
Salt and pepper to taste

Servings: 1 waffle
Place a skillet over a medium heat and spray lightly with a non stick spray. Place both eggs into a small bowl and whisk with a fork for about 30 seconds. Pour the eggs into the skillet and stir until cooked - to create scrambled eggs. Remove from heat and let cool for five minutes. Meanwhile pour the FlapJacked mix and water or milk into a bowl. Stir together to create a thick batter. Stir in cheese, bacon and eggs and mix together well. Add in just a pinch of salt and pepper and stir again. Let batter sit while your waffle iron heats up. When waffle iron is ready, coat with non stick spray and pour 1/2 of the batter onto it and cook as per the manufacturer's directions. Repeat with other half of the batter. Serve immediately or store in a freezer safe bag to reheat later on. ENJOY !
