CHEWY PEANUT BUTTER COOKIES
Are you a peanut butter addict? We've got a solution for you ! These chewy peanut butter cookies are full of that nutty flavour that we all love but are way better for you than the traditional recipe. We've created two versions of the recipe to help you choose the amount of carbohydrates and sugar that you're looking for: one using Truvia baking blend and the other using sugar. Each cookie has a boost of protein, healthy fats and tastes delicious!
250g of creamy peanut butter
112ml cup 2% milk
1 tsp vanilla extract
63g Truvia Baking Blend or 170g sugar
265g FlapJacked Buttermilk Mix
Serving size: 1 cookie
Pre heat the oven to 180°C or gas mark 4. Combine the peanut butter and milk into a large bowl and stir well, then add the vanilla extract, eggs and sugar and stir until combined. Slowly add in FlapJacked mix and blend until you have a thick dough. Coat the baking sheet(s) with a non stick spray and scoop out a rounded tablespoon full of dough and round into a ball with your fingers. If the dough is too sticky dip your fingers in water. Place on the baking sheet and repeat with the rest of the dough. Dip a fork in water and press down onto each ball of dough twice, making a criss cross pattern. Place baking sheet(s) into the oven and bake for 8 minutes. The bottoms of cookies will be golden brown. Let the cookies cool for a few minutes before eating. Enjoy !
