COCOA PEPPERMINT COOKIES
What's better than a chewy, delicious cookie bursting with peppermint flavour? One that's lower in fat, sugar and carbohydrates, and still tastes great ! Our cocoa peppermint cookies are perfect to bake for the holiday season and can be enjoyed all year long.
85g butter (softened)
42g brown sugar
1 dropper full NuNaturals Liquid Peppermint NuStevia**
1 tsp vanilla extract
1 large egg
2 tbsp milk
105g FlapJacked Buttermilk Protein Pancake Mix
62g unsweetened cocoa powder
90g white chocolate chips
75g crushed peppermint candy cane pieces
** Can sub for 42g raw sugar + 1 tsp peppermint extract
Serving Size: 1 cookie
Preheat oven to 180°C or gas mark 4. Cream butter, sugar and NuStevia together in a large bowl, then add in egg, milk and vanilla extract and blend together. Stir in buttermilk mix, followed by cocoa powder and mix to create a smooth, thick batter. Gently fold in white chocolate chips and candy cane pieces. Drop a rounded tablespoon of batter onto lightly greased cookie sheet about 2" apart. Bake for 10-12 minutes (until edges are crisp). ENJOY !
