We like to associate many different flavours with the holidays, peppermint, eggnog, sugar anything and of course gingerbread. With spicy ginger flavour from the chai tea and a creamy sweet glaze these gingerbread doughnuts only taste like they would be sinful. Our recipe is sure to please kids and adults alike and no one would guess that they are actually healthy.
1 large egg
112ml unsweetened extra strong brewed chai tea
56ml unsweetened almond milk or any milk
70g 2% plain Greek yoghurt
60g blackstrap molasses
1 tbsp sugar
160g FlapJacked Buttermilk Protein Pancake Mix
1/4 tsp baking powder
1/2 tsp ground ginger
Coloured decorating sugar or sprinkles (optional)
62g icing sugar
110g softened cream cheese
30ml unsweetened extra strong brewed chai tea
Serving size: 1 doughnut (without glaze)
Pre heat the oven to 180°C or gas mark 4. Combine the wet ingredients; egg, chai tea, almond milk and yoghurt into a large bowl and whisk until blended. Add the sugar and molasses and stir. Add pancake mix, baking powder and ginger and mix well until there are no more lumps and let batter sit for 3 minutes to thicken. Use a spoon to dollop batter into a liberally greased doughnut pan. Non stick spray also works well. The batter should fill the doughnut pan to the centre but not cover it. Bake for about 12 minutes or until doughnuts are cooked through. While the doughnuts are cooking prepare the glaze. Use a hand mixer or blender to blend the three ingredients until you have a smooth, thick liquid. When the doughnuts are baked, allow them to cool for a few minutes before drizzling the glaze over the top. If desired sprinkle sugar over top of glaze. ENJOY !
